Ros Ritchie Cabernet Sauvignon Mazuelo and both sweet and savouryHand picked from the Baxendale vineyard nestled high on Whitlands hills in mid April, this wine epitomizes careful craftsmanship. Two thirds of the harvest were crushed into small open tubs, while the remaining grapes were destemmed and fermented as whole berries, ensuring the fruit, with its perfect ripeness and exceptional acidity, shone through. After a 13 day fermentation, with regular hand plunging to enhance color, flavor, and tannin extraction,
