Hand harvested fruit was carefully sorted and fermented in small batches, with Cabernet Sauvignon, Cabernet Franc, Petit Verdot and Malbec fermented in open tanks with regular hand plunging, while Merlot underwent a cold soak before fermentation to enhance softness and fruit depth.
