Defialy Candlebark Hill Cabernet ABV 15.5% Elegant and savouryFrom Domaine Defialy's Macedon Ranges vineyard, this 100% Cabernet Sauvignon reflects a challenging, low yielding season. Destemmed and left on skins for three weeks, it matured 18 months in 25% new and older Austrian (Stockinger) oak. A cool climate Cabernet with medium body, silky tannins and bright, fresh flavours a refined luncheon claret. Wild fermented, unfiltered and unfined to showcase purity and texture.
