Fruit was gently handled in open top fermenters with hand plunging to extract colour and build harmonious tannin structure. Fermentation began naturally and finished with cultured yeast, before pressing after two to three weeks. The wine then matured for nine months in Burgundian coopered oak (30% new) prior to bottling.
