Grapes are hand picked at full ripeness to preserve balance and aromatic expression, then gently pressed before cool fermentation. Roussanne and Grenache Blanc are primarily fermented in oak barrels and demi muids, while Clairette and Bourboulenc see a mix of tank and barrel. The wine is matured
