製造方法： 収穫されたブドウはすべて手摘みで16kgの小箱に入れられ、12～14℃で冷却されます。その後、除梗・破砕を行い、優しく圧搾したのち、6～7℃の低温で静清を行います。清澄した果汁のみを澱引きし、225Lのアリエ産オーク樽に移され、約17～19℃で5～7日間アルコー発酵終了後、一次澱とともに熟成させながら、最初の5か月間は週1回、その後は14日間に1回のバタージュ（熟成撹拌）を行い、約11ヶ月間の熟成瓶を経て、最終的に詰められます。熟成は225Lアリエ産樽オーク使用（新樽40％、2年樽目30％、3年樽目30％）。
